I was wondering if you could provide definitions for some of the OOC timeframes, like what constitutes a session, or an episode etc...

Generally put, a "step" in a story, wether season or character, is supposed to have about a week OOC to resolve, as can be seen in the scedule.
A season marks the entirety of the current game (season 1). Currently, that should take about 7-8 weeks after game start as per scedule.
As a general rule of thumb - do not sweat the timetable too much. We have buffers in there to account for real life issues and late joiners, as well as already measuring the time quite liberally. It's supposed to be fun and relaxing, not hectic.
